A washed processed, traceable lot from the Western Province of Rwanda

Since 2020, we have worked with Emmanuel Rusatira of Baho Coffee to source dynamic, traceable lots from Rwanda. Emmanuel started Baho after 20 years of work in the Rwandan coffee sector. Establishing his own company has allowed him to push quality protocols, pay higher prices, and work more closely with producers at each washing station he acquires. Standard practice for every Baho washing station includes training, input, and substantial health insurance premiums for all farmers delivering. Each station has an on-site agronomist who organizes training sessions on coffee plant care (planting, fertilizing, pruning, harvesting, etc), environmental protection, and the importance of traceability efforts. This lot comes from Ngoma Washing Station, one of Emmanuel's newest projects. 

Set on the shores of Lake Kivu in Western Rwanda, Ngoma processes cherries from over 780 local producers. Since 2019, Emmanuel has been separating lots processed at this station by the communities who grew it. This specific lot comes from a coffee producing community on Bikunda Island in Lake Kivu. Originally, just 13 producers from Bikunda Island brought their coffee to Ngoma. Emmanuel's commitment to building transparent and equitable relationships has helped this number grow, with 42 producers contributing this year.

To develop the rich, complex flavors in this coffee, cherries are intensively sorted before being de-pulped and sorted again by density. After a two-stage fermentation, the coffee is moved to shaded beds to begin the drying process. After 12-72 hours, it is moved again into full sun on raised drying beds. The weather and temperature are strictly monitored to have slow, controlled drying. Due to the cool breezes off Lake Kivu, drying times are quite long- around 45 days total for this lot. This coffee will perform great as an everyday, morning brew. Look for lively lemon notes with hints of chamomile. Dial in with a 1:16 ratio, filtered water at 208-210℉, a medium grind, and a 3-3.5 minute brew cycle.
