Nestled in the Yanatile Valley in Cusco in the south of Peru is the Valle Inca coffee producing group, run by Prudencio Vargas Saenz. The Valle Inca group is growing fast, currently at 101 members. Prudencio is valued in this community for his dedication and trustworthiness, and most of all, his drive to invest in the community and engage with their goals and concerns. With the increased quality, that producers get higher prices for their coffee than previously possible. He buys processed parchment from the growers and focuses on reinvesting the premium prices they obtain into the community's infrastructure to help them continue to improve quality year after year. He also brings years of experience as an agricultural loan officer, and as a result, was able to formalize the group and gain organic and fair trade certification.
This lot, grown by the Huaynapata Community, displays sweet, balanced notes of brown sugar, Asian pear, and cinnamon. It is nuanced yet approachable and shines beautifully in a brewed cup. Dial in by starting with a 1:16 brew ratio, filtered water at 209-210F, a medium grind, and a 3-3.5 minute brew cycle.
