From deep in the Dipilto and Jalapa Mountains
Single farm lot with juicy, enzymatic flavors
Situated in the Nueva Segovia region, Santa Maria de Lourdes embodies a diverse range of luscious vegetation and wildlife brought about by the high levels of annual rainfall. The farm is home to 4 wetlands, 6 water sources and 5 creeks that drain into the San Fernando River. The mountains of the farm serve as refuge for a number of birds, mammals and reptiles. The diverse flora includes various orchids, cedar, cedrillo, oak, and mata palo.
Ripe cherries are handpicked and sorted on the 46 hectare farm from December through March. The selected cherries are pulped to remove the skin then taken to the drying patios at a nearby mill. Here, they are regularly turned by rake to ensure even drying.
This coffee makes for a great auto-drip, press pot, immersion dripper, or even lighter espresso. Get dialed-into caramel apple and notes of jasmine with a 1:16 brew ratio, filtered water at 208-2010℉, a medium-coarse grind, and a 3-3.5 minute brew cycle.
