Single farm lot with juicy, enzymatic flavors
Jinotega, a mountainous region in Northern Nicaragua, is responsible for around 80% of the country's coffee production. This AAA lot comes from Finca Los Pozitos, a 35-hectare plot that was originally part of a big 210-hectare hacienda called Los Pozitos. In 2009, Edwin Burgos purchased this plot and decided to call the farm Los Pozitos, to honor the land's history.
In lower altitude regions like Jinotega, coffee plants are more susceptible to disease and flavor profiles are generally not as complex. With good management practices and attention to detail, lower altitude farms can still produce outstanding coffee. This lot is a great example of this.
This coffee makes for a great auto-drip, press pot, immersion dripper, or even lighter espresso. Get dialed-into green apple and notes of vanilla with a 1:16 brew ratio, filtered water at 208-2010℉, a medium-coarse grind, and a 3-3.5 minute brew cycle.
