Rare varietal lot from Guatemala

Beautiful coffee with clean, juicy finish

Don Higino, along with his wife Aura, brought their first small plot of land in 1988, naming it San Jose Las Moritas. With coffee seeds given to him by his father, they planted less than one hectare of Bourbon varietal trees. Every year they purchased more land. Today, Las Moritas is able to produce 4,860,000 lbs of coffee cherry, from several different parcels of land, with over a dozen different coffee cultivars planted. The farm remains a biodiverse ecosystem using the natural forest as shade as well as ingas, pine, and avocado trees for shade. Corn, beans, tomatoes, and peaches are also grown for supplemental income and diversity.

This lot is a washed process Yellow Pacamara coffee varietal. In 1958, a genetics breeding program at the Salvadoran Institute for Coffee Research led to the discovery of Pacamara. It is the 5th generational cross between Pacas and Maragogype. The result is a notably large coffee bean with intense, elegant flavors with a delicate body. The yellow coffee cherry is an extremely rare, natural mutation from the typical red color that tends to give more citrus and tropical fruit flavors and sugary sweetness.

This lot was entered into the Guatemala Cup of Excellence this year and is available in a limited quantity. Dial in to pleasant and beautiful notes of orange and vanilla with 1:16 brew ratio, filtered water at 208-210℉, a medium grind, and a 3-3.5 minute brew cycle.
