A washed lot from a historic Antigua farm
Creamy, full, all-day organic coffee
Producing some of the world’s most elegant coffees, Guatemala's Antigua Valley is a rightly famous coffee-growing origin. What makes Antigua so special though? Plants need sun, water, nutrients, and air, but Antigua provides an extra boost as its neighboring volcanoes layer mineral-rich ash and pumice into the topsoil. Acting like a sponge, the pumice retains moisture, offsetting the region’s relatively low rainfall. With warm sunny days, abundant tree cover, and cooler nights, the temperate Antigua Valley is perfect for finer cultivars like Bourbon and Catuai.
This lot comes from one of the most historic farms in the region, Finca El Pintado. The ten hectares of Bourbon variety on the land are over one hundred years old. This organic certified farm has been structured to be a forest environment, where coffee plants coexist with the natural ecosystem and are shaded by a canopy of native trees. In 2021, the farm went through a drastic stumping and renovation program, resulting in its first full harvest.
We are excited to bring in a lot from such a notable farm. Dial in to notes of pistachio, grapefruit and toffee by starting at a 1:16 brew ratio, filtered water at 208-210 , a medium grind, and a 3 to 3.5 minute brew cycle.
