Ceremony Coffee is honored to partner with Baltimore Orioles Pitcher, John Means, on this release of Ethiopia Kubi. Not only is John a fantastic pitcher, but he is also a coffee fan with an incredible palate. Washed Ethiopians from the Yirgacheffe growing region are his brews of choice. John selected this coffee from our seasonal offerings of Ethiopians and 10% of the proceeds of every bag sold will go to the Boys & Girls Club of Metropolitan Baltimore to help fund after school programs.
This lot is floral, juicy, bright, and elegant. Kubi is grown at a soaring 2200 masl and hand-picked for ripeness. After the cherries are picked they are floated to further sort out any defects. Next, the outside fruit is removed (or depulped). The beans are then density sorted for Grade 1 quality, fermented for 36 hours, and finally dried on raised beds for 10-14 days.
This coffee showcases everything Yirgacheffe has to offer. Dial into lively notes of orange blossom and peach tea. We recommend a 1:16.5 brew ratio, filtered water at 208-210℉, a medium grind, and a 3-3.5 minute brew cycle.
