A washed coffee reminiscent of kool-aid and summer
Ethiopia is traditionally a difficult place to navigate as far as buying and sourcing. In 2018, the Ethiopian Coffee Exchange opened trade channels outside of their system and restored traceability of information for coffees traded within the ECX. This is our second year sourcing with our importing partner, CCS, and exporter, SNAP, who work on the ground year round with producers.
SNAP partners with three washing stations in different regions. This lot comes from the Halo Hartume station in Gedeo region. Their mission is heavy in education for the small producers who sell their cherry to the washing stations. They provide training in processing and washing methods, as well as water recycling systems. SNAP is able to give more producers the opportunity to work within speciality coffee and obtain premium pricing because of their high quality washing stations and knowledge shared. A goal for 2021, is to have a majority of their coffees certified organic.
This coffee is grown at an astonishing high elevation of 2100 masl. The elevation and region attributes to its kool-aid like sweet, crisp flavors and sweetness. We recommend single-cup pour over method to extract the raspberry and red grape flavors of this coffee, using a ratio of 1:16.5, with filtered water at 208-210℉, and a 3-3.5 minute brew time.
