Single estate, single variety coffee from Tolima
Dreamy combination of lemon and sweet, creamy marzipan
This coffee is grown by Angel Miro Michahan on Finca La Argentina in the region of Tolima. This is the third largest growing region in Colombia and consistently prized for its specialty grade. The region lies along the Andes mountains and is known for incredibly high altitude and rich soil. It was until recently considered very dangerous due to the presence of the FARC, a guerrilla movement started in 1964. Peace talks began in 2012 and in 2017, the FARC became a non-weaponized group. As a result, travel has increased to the region, enabling more hands on sourcing.
Angel harvests his coffee, density sorts, and de-pulps on the same day to maintain as clean a coffee as possible. Then ferments for 16 hours before lying on shade-covered patios to dry for 18-20 days. A slow, controlled drying to capture as much flavor as possible without over-drying.
We love the great diversity amongst Colombian coffee, influenced by the variance in soil, topography, microclimates, varieties, and processing techniques seen throughout the country. Dial into the unique flavors of Tolima, experiencing lemon and sweet, marzipan notes and a signature creamy body. We recommend a 1:16 brew ratio, filtered water at 208-210℉, a medium grind, and a 3-3.5 minute brew cycle.
