This microlot is a delicious 100% Castillo gem from 8 producers at AMACA (Asociación de Mujeres Productoras Agropecuarias del Cauca), a group of women producers in the El Tambo region of Colombia's Cauca Department. We think paper filtered, by-the-cup pour over methods show the most articulate brews of this sweet, brown gem. Dial-into chocolate cookie, brown sugar, and splashes of citrus by starting with a 1:16.2 brew ratio, filtered water at 206-208℉, a medium grind, and a 3-3.5 minute brew cycle. The extraction yield ranges from orange and sugarcane at the lower end to dark chocolate and raisin at higher yields.
